Chef Vindex Tengker is a well-known personality in Indonesia. He is one of the country’s finest culinary experts and a household name because of his numerous TV appearances, most notably as a judge on MasterChef and Top Chef Indonesia.
Most of the popular Ramadhan dinner buffet would showcase a roasted lamb. AquaMarine dinner buffet features Kampung-style Slow Braised Leg of Lamb which is simmered for 16 hours, served with peanut gravy, spicy coconut, crushed peanut and warm glutinous rice in banana leaf. This is one of the most popular live stations at the restaurant.
Another very popular item at the buffet is “Foie Gras Sous Vide Egg Mushroom Espuma”. Basically its Foie Gras in a soft boiled egg with mushroom, a luxurious dish with foie gras that is nutritious and delicious.
We also like the Ayam Betutu and Sate Lilit. The Ayam Betutu is a Balinese dish of roasted chicken in rich bumbu betutu that is a highly seasoned and spicy dish. If you like to eat spicy food, you should try this dish and it is popular dish that is found in Bali and Lombok, Indonesia.
Sate Lilit is a type of satay variant also from Balinese cuisine, made from minced chicken. The tasty meat is wound around a stick and grilled on charcoal.
