PUTIEN is excited to announce the return of its highly anticipated annual Eel Festival, running from August 19 to November 30, 2024. This year’s festival promises an unforgettable gastronomic experience featuring exquisite eel dishes prepared in four distinctive styles. These delicacies pay homage to the rich culinary heritage of Fujian, while introducing new and exciting flavours to tantalise your taste buds.

A Value-Driven Dining Experience

As of August 20, 2024, PUTIEN has permanently absorbed the 9% Goods & Services Tax (GST) and waived the 10% service charge for both dine-in and takeaway customers at all outlets. With nett pricing, diners can now enjoy their favourite dishes with enhanced value and no hidden charges.

The Annual Eel Festival: A Seasonal Delight

As the seasons shift from summer to autumn, eels naturally fatten for migration, giving them a rich, oil-laden texture. PUTIEN’s Eel Festival is a prime opportunity to savor the freshest, most tender eels of the season. At the heart of the festival is the “Fresh Eel Cooked in Spring Water,” a dish that showcases live eels, cooked tableside to preserve their sweet and crisp flavour. Other standout dishes include Fujian’s well-known “Eel in Fujian Fermented Red Rice Wine,” the delectable “Baked Eel with Puning Bean Sauce,” and the aromatic “Steamed Eel in Garlic and Soy Bean Sauce.”

Export-Grade Eels from Shunde

The eels featured in the festival hail from Shunde, Guangdong, known as the “Hometown of Chinese Eels.” These export-grade eels are fed a specialised diet of wild cod fish meal, resulting in perfectly tender, flavourful meat. Flown in fresh three times a week, the eels weigh between 600-800 grams and measure nearly 70cm in length, ensuring a premium dining experience.

Four Distinctive Styles Eel Dishes to Savour

1. Eel in Fujian Fermented Red Rice Wine
A classic Fujian dish, the eel is fried and coated in a fermented red rice wine paste, delivering a crispy, aromatic, and rich flavour that perfectly balances crispiness, rich aroma, and succulence.

2. Fresh Eel Cooked in Spring Water
This dish highlights the natural freshness of live eels. The cooking is done at the dining table, dipping it in hot water to remove its mucous membrane before cooking it with goji berries and ginger in spring water. The result is a fragrant, delicate broth that enhances the eel’s natural flavour.

3. Baked Eel with Puning Bean Sauce
Baked to perfection, this dish combines the umami of fermented Puning bean sauce with aromatic garlic and onions. Each bite is packed with flavour as the eel absorbs the rich sauce.

4. Steamed Eel in Garlic and Soy Bean Sauce
Steamed on a bed of lotus leaves, the eel is infused with the fragrant blend of garlic and black bean sauce, each piece of eel is evenly coated resulting in a rich and fragrant flavour with every bite.
