These trees, which reduce waste and CO₂ emissions, reflect the hotels’ commitment to sustainability and innovation. This year, Fairmont Singapore has also partnered with Ambulance Wish, a foundation dedicated to fulfilling the final wishes of terminally ill patients. In the lobby, an upcycled tree adorned with 346 Teddy Bears stands as a symbol of warmth, kindness, and community support. The Teddy Bears are available for purchase through the Fairmont At Home festive collection, with all proceeds supporting Ambulance Wish Singapore’s mission to grant final wishes.
Italian Christmas Day Lunch at Prego
Prego’s Chef Davide Bizzarri introduces his inaugural festive menu, bringing his deep passion for Italian gastronomy and the vibrant flavours of his Tuscan and Pisan heritage. True to Chef Davide’s vision, this menu reimagines classic Italian dishes, making them lighter and refreshing for local palates.
On Christmas Day, savour an exclusive one-day set lunch beginning with Antipasti: Air-Flown Puglia Burrata Cheese “Artigiana” atop a Heirloom Tomato Salad with Prego’s Signature Tuscan Kale Pesto and Leccino Olives on a bed of fresh greens from the hotel’s rooftop Aquaponics Farm; Polpette, featuring In-House Cured Pork Sausage Meatballs in a rich Marinara Sauce; and Zuppetta di Mare, a Boston Lobster & Mixed Seafood Stew in a delicate white wine and tomato broth.
For the Secondi, enjoy Lasagna, Nonna’s Style Homemade Wagyu Beef & Porcini Mushroom Lasagna; Ossobuco, a classic Braised Veal Shank with Carnaroli Risotto “Alla Milanese” and Gremolata; and Merluzzo, a Sustainable Murray Cod Fish Fillet with capers, olives, dill, and a lemon sauce. Celebrate the season with a lavish, Halal-certified spread of local and regional flavours at Asian Market Café. Elevate your festive experience with an array of highlights, including Seafood on Ice, Sashimi and Sushi Stations, and D.I.Y. stations for local favourites like the restaurant’s much-loved Laksa. At live stations, our chefs showcase their culinary skills, grilling Chicken and Beef Satay and preparing Cajun Spiced Turkey Fajita. The spiced corner has a festive twist of Asian delights with dishes including a Salted Egg Fried Rice with Turkey Ham & Asparagus and a Marinated Fried Chicken in Cranberry Glaze.

There’s no better way to celebrate the season than with a festive high tea set from the team at ANTI:DOTE. Guests are invited to enjoy an artistic and fantastical culinary experience with beautifully crafted savoury and sweet treats by Chef de Cuisine Jacky Lai and Executive Pastry Chef Yong Ming Choong. Among the savoury selections are highlights like Smoked Salmon with Cinnamon Pear Compote and Ikura, Boston Lobster with Winter Truffle and Lemon Confit, and Turkey Ham with Maple Glaze. Sweet treats include a delicate Chestnut Crémeux with Cherry Marmalade, Vanilla Mousse Fruit Cake with a hint of Rum & Raisin, and the playful Cranberry Festive Macaron. Rounding out the experience are ANTI:DOTE ’s signature Madagascar Vanilla Scones, served with Devonshire cream, lemon butter curd, and strawberry marmalade. The festivities continue with a special three-course tapas pairing menu. Start with Dear Santa, a refreshing mix of passion fruit, elderflower liqueur, and prosecco, perfectly paired with Irish Oyster No.3 featuring miso and caviar, and House-Smoked Salmon Ceviche with pickled pear and a hint of chilli. For the main course, the Tropical Festive cocktail—a blend of cognac, green mango, and green chilli liqueur—accompanies a decadent Duck Confit Croquette with sakura ebi and leek jam, and a tender 48-Hour Sous Vide Wagyu Beef Short Rib Skewer with nutmeg and red wine glaze. To finish, the Sweet Carolling cocktail brings together rum, peach, mango, and milk, complemented by the delightful “Mont Blanc” dessert with cassis confit, chestnut chantilly, and puff pastry.

For two exclusive evenings, Fairmont Singapore’s poolside restaurant, The Eight, invites guests to indulge in a special BBQ Dinner Buffet. JAAN’s New Year’s menu features Sweet Roasted King Crab Leg paired with pink baby beetroot. Key highlights include BBQ Scottish Scallop with organic cabbage and Kristal caviar sauce, and Blue Scottish Lobster with brown butter hollandaise and wilted mizuna. For the main course, enjoy Red Label French Chicken with white truffle, foie gras, and truffle parsnip.
