First Gourmet Launches its latest concept Friends Bak Kut Teh at 100 AM Mall

Friends Bak Kut Teh, the new fast-casual eatery has launched its first outlet at 100 AM Mall. Friends Bak Kut Teh is created by First Gourmet, a multi award-winning culinary group behind established F&B concepts such as Zaffron Kitchen and Prata Wala, and is the group’s first Chinese concept.

The brand aims to bring together affordable and honest-to-goodness Bak Kut Teh featuring both Herbal and local Teochew (peppery) styles and well-executed zi char favourites for diners to enjoy in a comfortable and breezy setting. The 66-seater all-day dining eatery’s interior is decked out in a predominantly light wood and turquoise interiors with colourful traditional Straits Chinese tile décor. 

Friends Bak Kut Teh features two signature renditions of Bak Kut Teh – a Herbal 药材肉骨茶 and Teochew style 潮州肉骨茶. Both styles are available with premium bone-in pork ribs or short ribs; Prime Rib Bak Kut Teh ($13) and Bak Kut Teh ($7).

Diners will be delighted to know that Herbal Bak Kut Teh has a fine balance of herbal and peppery notes, made with a combination of 12 different herbs including angelica root (dang gui), wolfberry, and premium codonopsis root (dang shen). The soup is slow-brewed with pork bones under the chef’s watchful eye for two hours to extract the innate flavours of each ingredient resulting in a rich and flavoursome broth.

The Teochew style is Friends’ proprietary recipe using toasted white pepper, selected for their distinct flavour profile and aroma. The delicious broth is brewed for two hours with whole garlic bulbs imparting a lingering sweet fragrance.

The Lamb-Kut Teh 羊腿肉 骨茶 ($16) is an unique and impressive bone-in leg of lamb that is served in a herbal broth.

Look out for other premium dishes such as Salted Egg Prawn 咸蛋虾 ($18) and fresh seafood specialties such as Thai-style Steamed Sea Bass 蒸鲈鱼 ($15). Salted Egg Prawn consists of juicy whole prawns tossed in a rich and aromatic savoury yolk sauce. The Sea Bass is so fresh and packed with flavours. The fish steamed with its natural juices and topped with an appetising mix of finely-minced red bird’s eye chillies and garlic.
